Camper's Delight - Spam and Vegetables 

This is a super meal for campers who have some time to cook ever the campfire.  This meal will keep four family happy and satisfied!

1/4 cup brown sugar
8 new potatoes, sliced 1/4"
1/4 cup beer
2 cups carrots, sliced 1/4"
1/4 cup stone ground mustard
1 large onion, thinly sliced
1/2 tsp celery seed
12-oz can SPAM, cut into 12 slices

In small bowl combine brown sugar, beer, mustard, and celery seed. Divide vegetables and SPAM into equal portions, arranging each portion on a 18x12" piece of foil; drizzle mustard sauce over each and fold up to form 5x4" packet, sealing well. Place over medium hot coals, grilling 45 to 0 minutes or until vegetables are tender. Yield: 6 servings.

Breakfast Burritos

6 eggs
1/2 lb turkey bacon
a hunk of cheese
3 tortillas
spices
dried tomatoes
2 tsp powdered milk
a little water
3 packets of Taco Bell hot sauce

Fry bacon & set aside (near the campfire).

In a bowl or pot scramble eggs, powdered milk, & little water & pour into frying pan. Add cheese (broken in small pieces), spices & tomatoes & fry until done.

While eggs are frying, toast tortillas over campfire. Put eggs & bacon in tortillas & smother with hot sauce.

Feeds 3 adults.

Primo Pasta

14 oz pasta (spinach & tomato is our favorite)
1 jar spaghetti sauce (dehydrated into a leather roll)
spices (salt, pepper, garlic, oregano, etc.)
dried tomatoes
hunk of cheese (optional) broken into pieces

Pour all ingredients in pot & add enough water to cover them. Boil slowly until pasta is done. Stir occassionally. We add a hot dog or two sometimes.

Feeds 3 adults.

Sausage & Rice

2 sausages
1 cup minute rice
1 large oninion
1large green pepper
1/2 cup potato flakes
can of beer
spices
a little oil

Saute one large chopped onion and  one large green bell pepper in the bottom of a cooking pot.  Per person to be served, add one 6 to 8 inch section of sausage, cut into bite sized pieces, and about 1 cup of water per person.  Then throw in 1 cup of  minute rice, a half cup of potatoe flakes, and 1/4 can of beer per person.  Traditionally, the cook gets the rest of the beer, but that can be shared.   Boil at a slow boil until the liquid is reduced to an acceptable stew-like thickness.  Individually salt and pepper to taste. 

This is nice, because, with the exception of the onion and bell pepper, everybody carries their own ingredients, and delivers them to the cook.   Makes a very filling dinner, and a happy, satisfied cook...

Feeds 2-3 adults.
